Cajun Pickled Picnic Salad
Summertime and the living is eeeeasy—this should also go for all the side dishes you’ll be whipping up! I love this simple and spicy relish that brings the flavors of BBQ to your favorite seasonal vegetables. This pickled relish can be a combination of any favorite summer vegetables. Corn, okra, green beans, red bell pepper, and small button squash—anything on hand will do! What makes this pickle different is the addition of Cajun blackening seasoning and Thai chilies for an unexpected smokey flavor and a slight kick. Pickling is actually quite simple. A little vinegar, a little boiling water, then just add your seasonings and your veg—that’s it! The most important thing is to have a sterilized container and some patience, as the pickled goods taste best after 24 hours. Even though you could easily eat these pickles right out of the jar (and we do!) you can also chop them up and toss them into a number of summer side dishes. The tang of the vinegar and BBQ seasoning add an unexpected punch with each bite.
